Baseball Bat Sized Zucchini = Soup and Cake


 My friend had baseball-bat-sized-zucchini in her garden.
She shared some with me.

They truly are enormous!!!
I feel like I've been peeling and chopping and shredding zucchini all day.


But now I have soup simmering on the stove. 
And mouthwatering, moist, iced-chocolate-zucchini-brownie-cake.
As you can see, I didn't have enough willpower to wait til dinner.
YUM!

Come on over.   I'll save a piece for you.



(When zucchini gets this large, the skin and seeds can be a bit woody.
So just remove the skin and seeds and then use as you normally would.)

  2. Oh yum! I can't wait for the big zucchini - I cut them open - remove the see and then chop them in slices - and make bread and butter pickles from them - I have the best recipe and no one has ever guessed that they were zucchini instead of cucumbers. Oh how I love summer - I think tomorrow I'll make an apple cake - since I have more apples that we can eat up soon enough.

    1. I love all the produce available during the summer, too. But we do have to find creative ways to use or preserve it all. Apple cake sounds delicious!

  3. When I was little, how I hated zucchini! I think just the word alone made me gag. Now I love it and can't wait for it to come in season. My favourite recipe is this...

    Easy (and Cheap) Vegetable Pie

    1 1/3 Cups Chopped Zucchini
    3/4 Cup Chopped Tomatoes
    1/3 Cup Chopped Onion
    1/4 Cup Grated Parmesan Cheese
    1 Cup Skim Milk (regular milk will do)
    1/2 Cup Bisquick
    2 Eggs
    1/4 Tsp Salt (optional)
    1/4 Tsp Pepper

    Directions

    Preheat oven to 400 F.
    Lightly grease 10 inch pie plate
    Mix zucchini, tomatoes, onion and cheese in pie plate.
    Beat the remaining ingredients until smooth.
    Pour into pie plate.
    Bake until a knife inserted comes out clean. (About 30 minutes)
    Cool for 5 minutes before serving.
    Makes 6 servings.

  6. Oh yum, enjoy your treats! I wish someone would give me some! I didn't grow any this year. I am still bitter over last year's swarm of squash bugs.

  7. I wish zucchini would do well in our garden. Sadly I have yet to win a battle with the squash bugs that love zucchini as much as I do. :-( Your soup and cake look delicious!!

  8. Good grief they are enormous! Soup and brownies look delicious! Think the cake would go very stale if l was to pop over ( due to the distance ) but l wish l could! Yum! Pam xx

  9. We have had zucchini like that sometimes I cut circles and just egg and flour them and fry them up the kids used to love them.. Soup looks good and so does that cake.. Happy Thursday with love Janice

  11. I often end up with the baseball bat-sized zucchini, too. I peel and seed them and cut up in cubes and just put in freezer bags and freeze. They are good in vegetable soup!

    1. My friend has a "weekend farm", and the zucchini get oversized like this in just a few days! She says she's going to have to start making mid week trips out there.
