Eat Your Veggies!

Rosemary Chicken and Roasted Vegetables

Did you eat your veggies today?
I did!

We had Rosemary Chicken and Roasted Vegetables for dinner tonight.
It's so easy to make.

Put skinless, boneless chicken in a baking pan.

Rough chop red peppers, carrots and broccoli.
Lay them out in one layer in a separate baking pan.

Drizzle both the chicken and the veggies with a small amount of olive oil.
Sprinkle both pans with black pepper, rosemary, sage, onion and oregano.
Add a few red pepper flakes to the veggies if you like some heat.

Pour a small amount of low sodium chicken broth into each pan
  (just enough to barely cover the bottom)  to help keep things moist while cooking.
It also adds a bit more flavor, since I did not add any salt.

Roast in a 350 oven for about an hour, til the meat is cooked through and has a nice light brown tinge. 
The vegetables taste so sweet when they are roasted!

Simple and healthy!

(Feel free to substitute any of your favorite veggies and herbs.)

  1. I did eat my veggies today - and every day. Today was sliced vine ripe tomatoes (not from the supermarket), grilled zuchinni, corn on the cob, grilled peppers and grilled onion slices - oh how I love summer!

  6. Looks delicious to me! I love roast veg..my favourite is slicing in half cherry tomatoes, and adding them in on top of the other veg..they taste so sweet. Sweet potato is another one of my fav's, it's really nice roasted.

  11. Yummy and good for you! It's interesting how my food choices have changed over the years-I'd much rather have a good healthy meal like that then a fast food meal or anything sweet-looks wonderful!

  16. This is my kind of eating! I ate my veggies last night. Skillet veggies, similar to yours, then throw in tomatoes and a slice or two of melty cheese.

  17. Oh, yum! I love roasted veggies. We ate at Houston's on the Plaza Saturday night. They had roasted beets that were soooo good. I bought some beet seeds yesterday so hopefully we'll be able to cook our own :)
